Description

This Moroccan appetizer features Dried fava beans, soaked, Garlic cloves, Cumin seeds. It delivers aromatic, well-seasoned taste. Ideal for parties, potlucks, or as a starter before the main course. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

Ingredients

Directions

  1. Olive oil Salt 1/4 ts Za'atar -=OR=- use thyme, -- oregano or marjoram
  2. Drain & skin the soaked fava beans.
  3. Cover with fresh water & cook gently with the garlic & cumin seeds until the beans are tender.
  4. Drain.
  5. Puree the beans.
  6. Stir in enough olive oil & a littel water, to give the puree a soupy consistency.
  7. Season with salt & beat well.
  8. Heat just before serving with a little more olive oil & a sprinkling of the za'atar.
  9. Serve with Arab bread & a bowl of mixed spices (ground cumin, cayenne & salt)
