Its a wholesome, homemade treat that feels indulgent yet healthy, ready in under an hour from start to finish.Ingredients
Directions
-
Preheat your oven to 350F (175C).
-
In a large mixing bowl, whisk together the whole wheat flour, white flour, quick-cooking oat meal, brown sugar, shredded orange peel, baking powder, baking soda, and salt until well combined.
-
In a separate bowl or measuring cup, combine the buttermilk and egg white, stirring until smooth.
-
Pour the wet ingredients into the dry ingredients and stir gently until just moistened; do not overmix.
-
Fold in the 1/8 cup of sunflower seeds until evenly distributed throughout the batter.
-
Lightly oil a 1 1/2-quart casserole dish or loaf pan and sprinkle the bottom with the wheat germ.
-
Pour the batter into the prepared dish and smooth the top with a spatula.
-
Bake for 50 to 60 minutes, or until a wooden pick inserted into the center comes out clean.
-
If the top begins to brown too quickly, loosely cover the loaf with aluminum foil for the remaining baking time.
-
Remove from the oven and let cool in the dish for 10 minutes.
-
Turn the bread out onto a wire rack to cool completely.
-
Brush the top of the loaf with honey and sprinkle with the remaining tablespoon of sunflower seeds.

Note
Serve warm or at room temperature.
Storage: Wrap cooled bread tightly in plastic wrap or store in an airtight container at room temperature for up to 3 days. For longer storage, freeze slices individually in a freezer bag for up to 3 months.
Substitution: If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
Tip: Ensure your baking powder and baking soda are fresh for the best rise. Whole wheat flour can vary in absorbency; if the batter seems too thick, add a splash more buttermilk.
