Description

This Mediterranean-inspired dish transforms humble onions into elegant vessels for a hearty quinoa and chickpea filling. The sweet, caramelized onions provide a perfect contrast to the earthy, nutty flavors of the roasted walnuts and savory chickpeas. Topped with a creamy, tangy walnut sauce infused with brown rice vinegar, this meal offers a delightful balance of textures and tastes. It is a wholesome, plant-based option that feels both comforting and sophisticated. Ideal for a light yet satisfying weeknight dinner or an impressive side dish for holiday gatherings, this recipe highlights simple ingredients prepared with care. The combination of fresh herbs, aromatic garlic, and tender vegetables creates a vibrant profile that appeals to vegans and vegetarians alike.

Directions

  1. Preheat oven to 400°F (200°C) if roasting onions, or prepare a steamer insert for a large pot.
  2. Carefully hollow out the insides of the onions using a spoon or apple corer, leaving the bottoms intact and the outer layers whole to form a cup. Reserve the onion insides.
  3. Steam the hollowed onions until tender, approximately 10-15 minutes. Reserve 3/4 cup of the starchy cooking liquid before draining.
  4. Rinse the quinoa thoroughly under cold water. In a small saucepan, bring 1 cup of water and 1/4 teaspoon sea salt to a boil.
  5. Stir in the quinoa, return to a boil, then reduce heat to low. Cover and simmer for 15 minutes until water is absorbed.
  6. Remove quinoa from heat and let it stand, covered, for 10 minutes. Fluff with a fork and set aside.
  7. Finely chop the reserved onion insides.
  8. Heat oil in a large skillet over medium heat. Add the chopped onion insides, minced garlic, sliced mushrooms, and sliced celery.
  9. Sauté the vegetables for 15 minutes, or until soft and fragrant.
  10. Stir in the cooked quinoa and chickpeas. Heat through for about 5 minutes, mixing well to combine flavors.
  11. Spoon the quinoa mixture into the steamed onion shells, filling them generously. Arrange any excess stuffing on the serving dish around the bases of the onions.
  12. In a food processor, crush the roasted walnuts. Add the soy sauce and brown rice vinegar, blending until a creamy mixture forms.
  13. With the processor running, slowly blend in the reserved onion cooking liquid to create a smooth sauce.
  14. Pour the walnut sauce into a small saucepan and heat gently, stirring constantly, until warmed through.
  15. Pour the warm walnut sauce over the stuffed onions. Garnish with fresh parsley and serve immediately.
