Rabbit Hasenpfeffer.
Description
This traditional German Hasenpfeffer features tender rabbit braised in a rich, aromatic sauce of vinegar, sugar, and pickling spices. The meat absorbs the sweet and tangy flavors, resulting in a deeply savory dish with a complex, home-style taste. The slight acidity cuts through the richness of the meat, while the pickling spices add warmth and depth. It is an excellent choice for a hearty weeknight dinner or a special family gathering. Simple to prepare with pantry staples, this recipe offers a comforting and satisfying meal that highlights the delicate flavor of rabbit.Ingredients
Directions
-
In a large bowl, combine vinegar, water, salt, pepper, sugar, pickling spices, and sliced onions.
-
Place the dressed rabbit in a non-reactive container and pour the marinade over it, ensuring it is fully submerged.
-
Cover and refrigerate for 2 days, turning the rabbit occasionally.
-
Remove rabbit from marinade, drain well, and pat dry with paper towels. Reserve the marinade and solids.
-
Dredge the rabbit pieces in flour, shaking off excess.
-
Heat fat in a large heavy pot or Dutch oven over medium-high heat. Brown the rabbit pieces on all sides, working in batches if necessary. Remove rabbit and set aside.
-
Add the reserved marinade solids (onions and spices) to the pot and saut&# 195;© for 2 minutes.
-
Return the rabbit to the pot. Add 1 cup of the reserved liquid marinade and enough water to come halfway up the sides of the rabbit.
-
Bring to a boil, then reduce heat to low. Cover and simmer gently for 1 to 1.5 hours, or until the rabbit is tender.
-
Remove rabbit and keep warm. Strain the cooking liquid into a saucepan.
-
Skim excess fat from the liquid. Simmer to reduce if necessary, then thicken with a slurry of flour and water if desired. Stir in Kitchen Bouquet for color.
-
Adjust seasoning with salt and pepper to taste. Pour gravy over the rabbit and serve.
