Description

This Raspberry Frost is a refreshing and elegant no-bake dessert that balances the bright acidity of fresh raspberries with the richness of whipped cream and the lightness of beaten egg whites. The dish features a homemade raspberry sorbet base, which is frozen until firm and then chopped into bite-sized pieces. These are gently folded into a stabilized mixture of whipped cream, lemon zest, and stiffly beaten egg whites, creating a texture that is both creamy and icy. It is an excellent choice for summer gatherings, light dinners, or when you need a sophisticated yet simple finale to a meal. The natural sweetness of the berries shines through, enhanced by a touch of lemon and sweetener, making it a delightful treat that feels indulgent yet fresh.

Ingredients

Directions

  1. Puree the raspberries in a blender or food processor until smooth.
  2. Press the puree through a fine-mesh sieve to remove seeds, discarding the solids.
  3. Stir the lemon juice and 2 tablespoons of Equal Spoonful into the raspberry puree.
  4. Pour the mixture into a shallow container and freeze until almost solid, about 2-3 hours.
  5. While the raspberry mixture freezes, beat the egg whites in a clean bowl until foamy.
  6. Gradually add the remaining 4 tablespoons of Equal Spoonful to the egg whites and continue beating until very stiff peaks form.
  7. In a separate bowl, mix the whipped cream (or crème fraîche) with the grated lemon peel.
  8. Gently fold the beaten egg whites into the cream mixture until well combined.
  9. Remove the frozen raspberry mixture from the freezer and chop it into bite-sized pieces using a fork or spoon.
  10. Fold the chopped raspberry sorbet pieces into the cream and egg white mixture gently.
  11. Serve immediately in chilled glasses or bowls.
  12. Garnish each serving with a sprig of fresh mint.

Note

For best texture, ensure the raspberry mixture is frozen solid but not rock-hard before chopping. If it is too hard, let it sit at room temperature for 5 minutes.

You can substitute artificial sweetener with regular sugar or honey, adjusting the amount to taste based on the sweetness of the raspberries.

This dessert is best served immediately after assembly to maintain the airy texture of the whipped components.

If using crème fraîche instead of whipped cream, the dessert will be denser and tangier. Ensure the crème fraîche is well-chilled.

Make sure all utensils used for beating egg whites are completely clean and free of grease for maximum volume.
