Description

This robust chili delivers deep, savory flavors through a long, slow simmer that tenderizes the beef chuck and melds the spices. The combination of chili powder, oregano, and crushed red pepper creates a warming heat, while the tomatoes and green peppers provide a chunky, satisfying texture. It is the perfect comfort food for chilly evenings or game day gatherings. Serve it hot with shredded cheddar and a side of rice for a complete meal.

Ingredients

Directions

  1. Cut the beef chuck into 3/4-inch cubes.
  2. In a large saucepot over high heat, heat the vegetable oil.
  3. Add the chopped onion and cook for 3-4 minutes, until translucent.
  4. Add the minced garlic and cook, stirring constantly, for 1 minute.
  5. Remove the onion and garlic mixture from the pot and set aside on a plate.
  6. Add the beef cubes to the hot pot in batches, cooking until well-browned, about 5-6 minutes total.
  7. Return the onion and garlic mixture to the pot with the browned beef.
  8. Add the tomatoes with puree, tomato paste, chili powder, oregano, crushed red pepper, and 1 cup of water.
  9. Cover the pot and simmer, stirring occasionally to break up the tomatoes, for 1.5 hours or until the beef is tender.
  10. Add the chopped green pepper, uncover the pot, and continue simmering, stirring occasionally, for 30 minutes.
  11. Season with salt to taste.
  12. Spoon the chili into individual serving bowls.
  13. Top with shredded cheddar cheese and serve with hot white rice if desired.
