Reba McEntire’s Hot ‘N Chunky Chili
Description
This robust chili delivers deep, savory flavors through a long, slow simmer that tenderizes the beef chuck and melds the spices. The combination of chili powder, oregano, and crushed red pepper creates a warming heat, while the tomatoes and green peppers provide a chunky, satisfying texture. It is the perfect comfort food for chilly evenings or game day gatherings. Serve it hot with shredded cheddar and a side of rice for a complete meal.Ingredients
Directions
-
Cut the beef chuck into 3/4-inch cubes.
-
In a large saucepot over high heat, heat the vegetable oil.
-
Add the chopped onion and cook for 3-4 minutes, until translucent.
-
Add the minced garlic and cook, stirring constantly, for 1 minute.
-
Remove the onion and garlic mixture from the pot and set aside on a plate.
-
Add the beef cubes to the hot pot in batches, cooking until well-browned, about 5-6 minutes total.
-
Return the onion and garlic mixture to the pot with the browned beef.
-
Add the tomatoes with puree, tomato paste, chili powder, oregano, crushed red pepper, and 1 cup of water.
-
Cover the pot and simmer, stirring occasionally to break up the tomatoes, for 1.5 hours or until the beef is tender.
-
Add the chopped green pepper, uncover the pot, and continue simmering, stirring occasionally, for 30 minutes.
-
Season with salt to taste.
-
Spoon the chili into individual serving bowls.
-
Top with shredded cheddar cheese and serve with hot white rice if desired.
