Red Chili Nightmare
Description
This American-style chili combines dried red chiles, warm spices, pinto beans, pork sausage, coarse-ground beef, almonds, sesame seeds, tomato paste, and a touch of milk chocolate. Long simmering brings the ingredients together into a thick, hearty dish with savory, spicy, earthy, and subtly sweet flavors. It is a substantial main course well suited to cold-weather meals and slow cooking.Ingredients
Directions
-
Rinse the dried pinto beans and soak them in water overnight.
-
Drain the soaked beans and place them in a heavy saucepan with enough water to cover by about 2 inches.
-
Bring the beans to a boil, reduce the heat, and simmer partially covered for about 45 minutes, or until tender but still firm.
-
Drain the beans, reserving the cooking liquid, and set aside.
-
Melt the lard in a heavy skillet over medium heat. Add the cooked beans and fry them lightly until they begin to crisp. Remove from the heat and set aside.
-
Melt the bacon drippings in a large, heavy pot over medium heat.
-
Add the chopped onion and cook until softened and translucent.
-
Add the country-style pork sausage and coarse-ground beef, breaking the meat apart as it cooks.
-
Add the garlic, anise, coriander seeds, fennel seeds, ground cloves, ground cinnamon, black pepper, paprika, nutmeg, cumin, oregano, sesame seeds, and almonds.
-
Cook the meat and spice mixture, stirring occasionally, until the meat is thoroughly browned.
-
Add the reserved bean cooking liquid, fried beans, dried red chiles, chile caribe, milk chocolate, tomato paste, vinegar, lemon juice, and chopped tortilla.
-
Bring the chili to a boil, then reduce the heat to low.
-
Simmer uncovered for about 1 hour, stirring occasionally. Add additional water or reserved bean liquid as necessary to maintain a thick, chunky consistency.
-
Taste and adjust the seasoning as needed before serving.
