Description

This vibrant Rhubarb Punch is a delightful blend of tart rhubarb, bright citrus, and sparkling soda water. It captures the essence of spring with its crisp flavor profile and refreshing finish. The natural sweetness of the sugar balances the sharp acidity of the rhubarb and lemon, creating a harmonious taste that is both invigorating and satisfying. Ideal for summer gatherings, brunches, or as a non-alcoholic alternative at parties, this punch is easy to prepare and can be made ahead of time to allow the flavors to meld. The addition of fresh orange juice adds a layer of complexity, while the soda water provides a light, effervescent texture that cleanses the palate. Serve chilled over ice for a cool and refreshing treat.

Ingredients

Directions

  1. In a large saucepan, combine the chopped rhubarb and 4 cups of water.
  2. Bring the mixture to a boil over high heat.
  3. Reduce the heat to medium and simmer, stirring occasionally, for 10 minutes or until the rhubarb is softened.
  4. Line a sieve with cheesecloth and place it over a large bowl.
  5. Pour the rhubarb mixture into the sieve to strain the liquid.
  6. Allow the mixture to strain for at least 2 hours or overnight to extract all the flavor.
  7. Discard the solid pulp and rhubarb pieces.
  8. Stir the granulated sugar, fresh orange juice, and lemon juice into the strained rhubarb liquid until the sugar is fully dissolved.
  9. Transfer the mixture to a pitcher and refrigerate until well chilled.
  10. Just before serving, add the soda water to the pitcher and gently stir to combine.

Note

Straining the rhubarb mixture overnight yields a clearer and more flavorful juice, but if you are in a hurry, 2 hours is sufficient.

For a stronger rhubarb flavor, increase the simmering time slightly, but be careful not to make the juice too bitter.

You can adjust the sweetness by adding more or less sugar according to your taste preferences.

Add a splash of sparkling wine or champagne for an adult version of this punch.

Garnish with fresh mint leaves or slices of lemon and orange for a decorative touch.
