Directions
-
Bring a large pot of salted water to a boil. Cook the rigatoni according to package directions until al dente. Reserve 1 cup of pasta water before draining.
-
While the pasta cooks, cut the cauliflower head into florets. If the florets are large, halve them for even cooking.
-
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the cauliflower florets and sauté for 5-7 minutes until golden brown and tender-crisp. Season with salt and pepper. Remove from skillet and set aside.
-
In the same skillet, add the remaining 2 tablespoons of olive oil. Add the thinly sliced red onion and cook over medium heat for 5 minutes until softened and translucent.
-
Add the crushed red pepper to the onions and sauté for 30 seconds until fragrant.
-
Add the drained rigatoni and the sautéed cauliflower to the skillet with the onions. Toss to combine.
-
Add reserved pasta water a splash at a time to create a light sauce that coats the pasta. Toss well.
-
Remove from heat. Stir in the fresh mint leaves and chopped parsley. Toss gently to distribute the herbs.
-
Serve immediately, garnished with additional crushed red pepper or fresh herbs if desired.
