Description

This comforting roast chicken recipe transforms simple ingredients into a restaurant-quality meal. The combination of earthy dried sage, savory defatted chicken broth, and sweet apple juice creates a rich, aromatic basting liquid that keeps the meat moist and flavorful. Fresh sage leaves added just before roasting infuse the dish with a bright, herbal note, while caramelized onions provide a soft, sweet contrast. Perfect for a cozy weeknight dinner or a light holiday centerpiece, this dish offers a healthier take on traditional roasting without sacrificing taste. Serve it with roasted root vegetables or crusty bread to soak up the delicious pan juices.

Ingredients

Directions

  1. Preheat the oven to 375&# 194;°F (190°C).
  2. In a small bowl, combine the dried sage, defatted chicken broth, and thawed apple juice. Stir until well mixed and set aside.
  3. Rinse the chicken pieces under cold water and pat them completely dry with paper towels.
  4. Place the chicken pieces in a single layer in a roasting pan.
  5. Scatter the diced onions evenly around and under the chicken pieces in the pan.
  6. Drizzle the olive oil over the chicken and rub it gently to coat each piece. Sprinkle generously with salt and pepper.
  7. Sprinkle the chopped fresh sage over the chicken and onions.
  8. Pour the broth and apple juice mixture evenly over the chicken and into the pan.
  9. Roast in the preheated oven for 45 to 60 minutes, basting the chicken with the pan juices every 15 minutes, until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  10. Remove from the oven and let rest for 5 minutes before serving. Serve hot with the roasted onions and remaining pan sauce.

Note

For best results, ensure the chicken is patted very dry before seasoning to help the skin crisp up.

If using a whole chicken instead of pieces, increase the cooking time to 1 hour 15 minutes to 1 hour 30 minutes, or until the juices run clear.

You can substitute fresh sage for the dried sage in the broth mixture by using 3 tablespoons of chopped fresh sage instead of 1 tablespoon dried.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a covered dish with a splash of broth to maintain moisture.

For extra flavor, add sliced carrots or potatoes to the roasting pan along with the onions.
