Roasted Beef Marinade
Description
This robust marinade infuses beef with deep, aromatic flavors from juniper berries, cloves, and bay leaves. The balance of salt and sugar helps tenderize the meat while enhancing its natural savory notes. Ideal for large cuts like brisket, roast, or even turkey, this brine ensures juicy results every time. Simmering the spices releases their essential oils, creating a complex flavor profile that penetrates the meat during soaking. Perfect for holiday roasts or weekend dinners, this recipe brings restaurant-quality flavor to your kitchen without complicated techniques.Ingredients

Note
This brine is inspired by Jeremiah Towers and yields enough for a 12- to 14-pound turkey or large beef roast. The spicing is subtle, highlighting the salt and sugar with faint aromatic notes.
For a pork loin, reduce all ingredient amounts by half. For fish or chops, reduce amounts by a quarter.
This recipe can also be used for roast pork and smoked fish, providing a similar flavor profile to commercial smoked meats but without the smoke flavor.
