Roast Quail With Juniper Berries Ii (Relish)
Description
This vibrant cranberry relish offers a perfect balance of tart, sweet, and spicy flavors. Fresh cranberries burst with acidity, softened by the caramelized sugar and plump raisins. Zesty notes from fresh orange and lime add brightness, while a bundle of ginger, cinnamon, chili, and vanilla bean infuses deep, warm aromatics. The texture is a delightful mix of smooth sauce and tender fruit chunks. It serves beautifully as a condiment for roasted meats, particularly quail or turkey, but also complements cheese boards or yogurt. Easy to prepare and perfect for holiday gatherings or everyday meals needing a flavor boost.Ingredients
Directions
-
Cut the orange and lime, with their skins, into a 1/4-inch dice and set aside.
-
Tie the grated ginger, cinnamon sticks, dried chili, and split vanilla bean in a piece of cheesecloth to form a spice bundle and set aside.
-
Place the sugar in a heavy large skillet, preferably one with straight sides.
-
Stir constantly over high heat until the sugar turns light amber.
-
If there are still lumps of sugar after it begins to color, work over low heat or off heat until the mixture is smooth and caramelized.
-
Stir in the diced orange, diced lime, and the spice bundle.
-
Cook over high heat, stirring constantly for 5 minutes.
-
Fold in the raisins and fresh cranberries, stirring gently to coat with the caramelized sugar mixture.
-
Cook over medium heat, stirring gently, until about half of the cranberries pop open, about 10 minutes.
-
Remove the pan from the heat and allow to cool slightly.
-
Remove the cheesecloth spice bundle and spoon the relish into sterilized jars.
-
Cover tightly and refrigerate.

Note
Storage: This relish keeps in the refrigerator for about 3 months when stored in airtight jars.
Safety Tip: Be careful when caramelizing sugar as it can burn easily and becomes very hot. Stir constantly and have caution when adding fruits to the hot sugar to avoid splattering.
Substitutions: If you do not have fresh cranberries, frozen unsweetened cranberries can be used. For a less sweet version, reduce the sugar by 1/4 cup.
Serving Suggestion: Serve alongside roasted quail, turkey, pork, or as a topping for cheesecake and yogurt.
