Rum Balls
Description
These classic Rum Balls are a timeless no-bake dessert that combines the crunch of vanilla wafers with the richness of cocoa and chopped nuts. The mixture is bound together with a blend of dark rum and light corn syrup, creating a dense, fudgy texture that holds together perfectly. As they sit, the flavors meld and intensify, making them even more delicious after a few days. Rolled in powdered sugar, they look like little snowballs and offer a sophisticated sweet-and-spicy kick from the rum. Perfect for holiday cookie exchanges, potlucks, or as an elegant after-dinner treat served with coffee. They are surprisingly easy to assemble, requiring no oven time, making them a favorite for both novice and experienced bakers.Ingredients
Directions
-
Place vanilla wafers in a food processor or sealable bag and crush them until they are very fine crumbs.
-
In a large mixing bowl, combine the crushed wafers, 2 tablespoons of powdered sugar, 1 cup of cocoa powder, and 1/2 cup of finely chopped nuts.
-
In a small separate bowl, whisk together 2 oz of dark rum and 2 oz of light corn syrup until well blended.
-
Pour the rum and syrup mixture over the dry wafer mixture and stir thoroughly until all ingredients are evenly incorporated and the mixture holds together when pressed.
-
Cover the bowl and let the mixture stand at room temperature for 30 minutes to allow the flavors to meld and the mixture to firm up.
-
Using your hands, roll the mixture into small, bite-sized balls (approximately 1 inch in diameter).
-
Roll the formed balls in additional powdered sugar until completely coated.

Note
Storage: Store rum balls in an airtight container at room temperature for up to 2 weeks. They can also be refrigerated for longer storage; allow them to come to room temperature before serving for the best texture.
Ingredient Substitutions: For a non-alcoholic version, replace the dark rum with an equal amount of vanilla extract or orange juice. If you prefer a stronger rum flavor, you can double the amount of rum and reduce the corn syrup slightly.
Variations: Try adding a teaspoon of almond extract for extra flavor, or use different types of nuts such as pecans, walnuts, or macadamia nuts. You can also dip half the balls in melted chocolate for a decadent finish.
Tips: If the mixture is too dry to hold together, add a little more corn syrup or rum, one teaspoon at a time. If it is too wet, add more crushed wafers or cocoa powder. Wearing food-safe gloves can prevent the cocoa from staining your hands.
