Note

Store cooled bread in a plastic bag at room temperature for up to 3 days. For longer storage, slice and freeze for up to 3 months.

Add 1/2 cup of sunflower seeds or raisins to the dough for extra texture and flavor. Substitute all-purpose flour for white flour if unbleached is unavailable.

Use a dark ale or stout for the best flavor profile. If the dough is too sticky, add flour one tablespoon at a time. If too dry, add water one tablespoon at a time.
