  1. Dissolve the ground saffron in the olive oil and let stand for about 15 minutes to infuse the oil with color and flavor.
  2. Finely mince the garlic cloves.
  3. Add the minced garlic, lemon juice, cumin, turmeric, sugar, salt, and pepper to the saffron-infused oil and mix well. Set aside.
  4. Bring a large pot of salted water to a boil.
  5. Cook the pastina in the boiling water until very al dente, following package instructions.
  6. Drain the pasta and rinse it thoroughly under cold running water to stop the cooking process and cool it down. Drain again well.
  7. Place the cooled pasta in a large bowl and toss gently with the saffron-flavored oil mixture to coat evenly.
  8. Let the pasta cool to room temperature, stirring occasionally to ensure it is thoroughly coated and does not stick together.
  9. Add the toasted pine nuts, drained currants, chopped mint, parsley, and coriander to the pasta bowl.
  10. Toss everything together gently until well combined.
  11. Serve at room temperature, garnished with fresh mint sprigs or leaves and pomegranate seeds if desired.
  12. Sprinkle lightly with orange blossom water just before serving if using.
