This elegant yet comforting dish features pounded chicken breasts wrapped in delicate slices of prosciutto, baked until tender and infused with savory flavors. Melted Swiss cheese adds a nutty depth, while a bed of frozen broccoli provides a healthy, vibrant contrast. It’s a perfect centerpiece for a weeknight dinner that feels special enough for guests. Ingredients

Directions

  1. Preheat oven to 400°F (200°C).
  2. Place one chicken breast between two sheets of plastic wrap and pound with a mallet until about 1/4 inch thick. Repeat with remaining breasts.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter.
  4. Add chicken breasts and cook until lightly browned on both sides, about 5 minutes total. Remove chicken and set aside.
  5. In the same skillet, melt the remaining 3 tablespoons of butter.
  6. Add chopped onion and sauté until tender, about 2 minutes.
  7. Remove skillet from heat and stir in flour and Dijon mustard.
  8. Gradually whisk in chicken broth, half-and-half (or gravy), and white wine (or water).
  9. Return skillet to low heat and add sliced mushrooms. Cook, stirring constantly, until the mixture thickens and boils.
  10. Stir in half of the grated Swiss cheese until melted and smooth.
  11. Arrange frozen broccoli on the bottom of an ungreased 13x9-inch baking pan.
  12. Spoon half of the mushroom sauce over the broccoli.
  13. Layer slices of ham or prosciutto over the sauce, then top with the browned chicken breasts, slightly overlapping them down the center. Tuck ends of ham slices under the chicken.
  14. Pour the remaining mushroom sauce over the chicken.
  15. Bake for 20-30 minutes, or until chicken is cooked through and tender.
  16. Remove from oven and sprinkle with remaining Swiss cheese and paprika.
  17. Return to oven for 2 minutes, or until cheese is melted. Let stand for 5 minutes before serving.
