Directions
-
Preheat oven to 400ðF (200ðC).
-
Place one chicken breast between two sheets of plastic wrap and pound with a mallet until about 1/4 inch thick. Repeat with remaining breasts.
-
In a large skillet over medium heat, melt 2 tablespoons of butter.
-
Add chicken breasts and cook until lightly browned on both sides, about 5 minutes total. Remove chicken and set aside.
-
In the same skillet, melt the remaining 3 tablespoons of butter.
-
Add chopped onion and sauté until tender, about 2 minutes.
-
Remove skillet from heat and stir in flour and Dijon mustard.
-
Gradually whisk in chicken broth, half-and-half (or gravy), and white wine (or water).
-
Return skillet to low heat and add sliced mushrooms. Cook, stirring constantly, until the mixture thickens and boils.
-
Stir in half of the grated Swiss cheese until melted and smooth.
-
Arrange frozen broccoli on the bottom of an ungreased 13x9-inch baking pan.
-
Spoon half of the mushroom sauce over the broccoli.
-
Layer slices of ham or prosciutto over the sauce, then top with the browned chicken breasts, slightly overlapping them down the center. Tuck ends of ham slices under the chicken.
-
Pour the remaining mushroom sauce over the chicken.
-
Bake for 20-30 minutes, or until chicken is cooked through and tender.
-
Remove from oven and sprinkle with remaining Swiss cheese and paprika.
-
Return to oven for 2 minutes, or until cheese is melted. Let stand for 5 minutes before serving.
