Ingredients

Directions

  1. Place each chicken breast between two sheets of plastic wrap and pound to an even 1/4-inch thickness.
  2. Lay a slice of prosciutto on top of each chicken cutlet, followed by one fresh sage leaf.
  3. Trim any excess prosciutto to fit the chicken, then secure with a toothpick if necessary to keep the layers together.
  4. In a shallow dish, combine the flour and salt. Dredge each chicken packet in the flour mixture, shaking off any excess.
  5. Heat the vegetable oil and butter in a large skillet over medium-high heat.
  6. Place the chicken packets in the skillet, prosciutto-side down first. Cook for 3-4 minutes until golden brown.
  7. Flip carefully and cook for another 3-4 minutes until the chicken is cooked through and the second side is golden.
  8. Remove from heat and serve immediately while hot.

Note

Prosciutto di Parma is traditional for this dish, but high-quality cooked ham works as a substitute if prosciutto is unavailable.

If fresh sage is not available, you can use dried sage, but reduce the quantity to 1/2 teaspoon as dried herbs are more potent.

To ensure even cooking, make sure all chicken cutlets are pounded to a uniform thickness.

Serve with a side of roasted potatoes, saut&# 195;©ed green beans, or a simple arugula salad.
