Description

This Satay-Satay Hurricane Soup is a bold and aromatic Indonesian-inspired dish that brings the warmth of home-style cooking to your table. The rich, savory broth is infused with a puree of garlic, shallots, red onion, and dried chilies, simmered with galanga, lemongrass, and lime leaves for an unmistakably Southeast Asian flavor profile. Packed with fresh shrimp, crab claws, mussels, and tender whitefish, this seafood medley offers a satisfying mix of textures and tastes. The balance of salty fish sauce, sweet sugar, and bright lime juice creates a complex, well-rounded dish perfect for weeknight dinners or special family gatherings. It is hearty yet refreshing, making it a delightful meal you will want to return to again and again.

Directions

  1. In a blender or food processor, combine garlic, shallot, red onion, dried red chili pepper, sweet paprika, and vegetable oil. Process until smoothly combined and pureed.
  2. Place the spice puree in a small saucepan over low heat. Cook for 15 to 20 minutes to release the flavors, stirring occasionally so it does not burn. Set aside to cool to room temperature.
  3. In a large saucepan, combine 4 tablespoons of the cooled garlic-onion mixture with galanga, lemongrass, lime leaves, chicken stock, fish sauce, and sugar.
  4. Bring the broth to a boil over medium heat.
  5. Add the shrimp, crab claws, mussels, and whitefish slices to the stock.
  6. Let the soup return to a boil and simmer for 2 to 3 minutes, or until the shrimp are pink and the mussels have opened.
  7. Remove from heat and stir in fresh lime juice.
  8. Ladle into bowls and garnish with chopped green onion and coriander root before serving.
