Sauce Bourguignonne (Red Wine, Tomato & Rosemary Sauce)
Description
This Sauce Bourguignonne is a deep, complex reduction that brings the rustic elegance of French cuisine to your home table. It combines the acidity of dry red wine with the umami depth of tomato paste and fresh garlic, balanced by the piney aroma of rosemary. The sauce is thickened naturally with arrowroot or cornstarch, resulting in a glossy, silky texture that clings beautifully to pasta, roasted vegetables, or seared tofu. While traditionally served with beef, this vegan version relies on the intense flavor of the wine and aromatics for satisfaction. It is perfect for date nights, holiday dinners, or elevating a simple weeknight meal into something special.Ingredients
Directions
-
Saute the minced onion, diced carrots, celery, and pressed garlic in 2 teaspoons of water for 5 minutes until the vegetables begin to soften.
-
Place the sauteed vegetables in a heavy 3-quart pot along with the tomato paste, dried thyme, dried basil, white pepper, fresh rosemary, red wine, dry red wine vinegar, and 1 cup of water (or wine).
-
Bring the mixture to a boil, then partially cover the pot and reduce heat to simmer for 15-20 minutes, until the vegetables are tender.
-
In a small bowl, whisk together the 1/3 cup cold water and arrowroot (or cornstarch) until smooth and fully dissolved.
-
Slowly pour the arrowroot mixture into the simmering sauce, stirring constantly to prevent lumps.
-
Lower the heat and continue stirring as the sauce thickens and becomes shiny, which should take about 5 minutes.
-
If necessary, add more dissolved arrowroot or cornstarch mixture, a teaspoon at a time, until the sauce reaches your desired consistency.
-
Season with salt to taste and serve warm.
