Description

This versatile sauce combines the richness of butter with the aromatic depth of fresh rosemary and a hint of nutmeg. It is designed to coat pasta or dumplings evenly, providing a smooth, velvety texture that enhances rather than overwhelms the main ingredient. Perfect for weeknight dinners, this recipe comes together quickly in a single skillet. The mild cheese notes from the Parmesan add a subtle umami kick, while the flour thickens the milk into a luxurious consistency. It pairs beautifully with homemade ravioli or wonton-based dumplings, offering a comforting, home-style meal that feels elegant yet effortless to prepare.

Note

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of milk if the sauce has thickened too much.

For a vegan version, substitute butter with olive oil or vegan margarine, use plant-based milk, and omit the Parmesan or use a nutritional yeast substitute.

If you do not have fresh rosemary, you can use 1/4 teaspoon of dried rosemary, but add it at the beginning with the flour to allow the flavors to bloom.

Be careful not to boil the sauce vigorously after adding the milk, as this can cause it to break or become grainy. Keep the heat low once thickened.
