  1. Dissolve the active dry yeast in warm water and let stand until foamy.
  2. Add 2 cups of flour, shortening, and salt to the yeast mixture.
  3. Beat at low speed with an electric mixer for 30 seconds, scraping the bowl.
  4. Beat at high speed for 3 minutes.
  5. Stir in as much of the remaining flour as you can mix in with a spoon.
  6. Turn the dough out onto a lightly floured work surface.
  7. Knead in enough remaining flour to make a moderately soft, smooth, and elastic dough for about 5 minutes.
  8. Cover the dough and let it rest in a warm place for 15 minutes.
  9. Divide the dough into 12 equal portions.
  10. Roll each portion between floured hands into a very smooth ball.
  11. Cover the balls with a damp cloth and let rest for 10 minutes.
  12. Gently flatten each ball with your fingers.
  13. Cover and rest for another 10 minutes, keeping the dough pieces covered until ready to use.
  14. On a well-floured surface, lightly roll one piece of dough at a time into a circle 7 inches in diameter, turning the dough over once.
  15. Do not stretch, puncture, or crease the dough; work with enough flour so it does not stick.
  16. Preheat oven to 450&# 194;°F (230°C).
  17. Place the rolled rounds on a baking sheet.
  18. Bake two rounds at a time for about 3 minutes, or until the dough is puffed and softly set.
  19. Turn over with a spatula and bake for about 2 more minutes, or until the dough is light brown.
  20. Repeat with the remaining dough, baking one batch before rolling the next batch.
