Description

This unique twist on the classic British scotch egg infuses the hard-boiled eggs with deep, aromatic flavors from Chinese black tea, star anise, and soy sauce. The eggs are then wrapped in a savory mixture of country-style sausage, fresh ginger, and garlic, creating a rich, umami-packed center. Coated in sesame seeds and fresh breadcrumbs, they are deep-fried until the exterior is crispy and golden brown while the inside remains tender. This dish offers a delightful contrast of textures and complex flavors, making it an impressive appetizer for parties or a hearty snack.

Ingredients

Directions

  1. Crack the shells of the hard-cooked eggs all over, tapping gently with a spoon.
  2. Place the cracked eggs, soy sauce, star anise, and tea bags in a medium saucepan.
  3. Add enough water to cover the eggs completely.
  4. Simmer the mixture uncovered for 25 minutes.
  5. Remove from heat and let the eggs stand in the liquid overnight to infuse flavors.
  6. Peel the infused hard-cooked eggs once cooled.
  7. Beat the raw eggs and sesame mustard together in a shallow bowl to create an egg wash.
  8. Combine the fresh bread crumbs and sesame seeds in a separate shallow bowl.
  9. Mix the bulk sausage, chopped ginger, and chopped garlic together in a bowl.
  10. Divide the sausage mixture into 8 equal portions.
  11. Flatten a portion of sausage meat and encase one peeled egg completely in the sausage, molding it smoothly around the egg.
  12. Dip the sausage-wrapped egg into the raw egg and mustard mixture, ensuring it is fully coated.
  13. Roll the egg in the breadcrumb and sesame seed mixture until evenly coated.
  14. Place the coated egg on a plate and repeat with the remaining eggs.
  15. Refrigerate the prepared eggs, covered, for at least 3 hours or overnight to firm up.
  16. Heat vegetable oil to a depth of 3 inches in a deep fryer or large pot to 375°F (190°C).
  17. Fry 2 or 3 eggs at a time, turning occasionally, until deep golden brown and cooked through, about 10 to 15 minutes.
  18. Remove the fried eggs with a slotted spoon and drain on paper towels.
  19. Let the eggs cool slightly to room temperature before serving.
  20. Cut each egg into quarters and serve with additional mustard if desired.
