Description

This Mexican dip features Pineapple, peeled & cored, Red bell pepper, diced, Chipotle chile puree. It delivers sweet, indulgent flavor, a pleasant kick of heat. A reliable recipe that works well for everyday cooking. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

Ingredients

Directions

  1. Cut pineapple into slices no more than 1/4" thick.
  2. Cut each slice in half.
  3. Dry saute the pineapple slices in a skillet for 8 minutes or so.
  4. You want it to be caremalized & golden brown, be careful not to use too high a heat.
  5. When cooked, dice & transfer to a mixing bowl.
  6. Stir in the remaining ingredients & taste to see if you need more lime juice or chile puree.
  7. This salsa rates a cool 4 out of 10.
  8. As a variation, replace the pineapple with peaches & cook using the same directions.
