Directions
-
In a bowl, blend the flour and salt together.
-
Cut in the margarine or butter using two knives or a pastry blender until the mixture resembles coarse crumbs.
-
Mix in the plain yoghurt with your fingers until the dough is well blended and holds together.
-
Divide the dough into 3 equal parts and place them in the refrigerator to chill while preparing the fillings.
-
For the cheese filling: Mix crumbled feta cheese, egg yolk, and finely chopped fresh parsley, then season with freshly ground pepper.
-
For the meat filling: Mix chopped uncooked beef, finely chopped green onion, parsley, and egg yolk. Season with salt, pepper, and cumin.
-
For the tahini filling: Combine tahini, fresh lemon juice, finely chopped parsley, and the juice of one pressed garlic clove. Season with salt and pepper.
-
Preheat the oven to 375&# 194;°F (190ðC).
-
Take one part of the chilled dough and roll it out as thin as you would for a pie crust.
-
Cut out 12 two-inch circles from the dough and place them on an ungreased cookie sheet.
-
Spoon an even amount of your chosen filling onto each circle, spreading it almost to the edges but leaving a small border.
-
If using the meat filling, sprinkle each with cumin and chopped pine nuts.
-
Bake for 15-20 minutes, or until the dough is golden brown and cooked through.
-
Remove from the oven and let cool slightly before serving.
