  1. In a bowl, blend the flour and salt together.
  2. Cut in the margarine or butter using two knives or a pastry blender until the mixture resembles coarse crumbs.
  3. Mix in the plain yoghurt with your fingers until the dough is well blended and holds together.
  4. Divide the dough into 3 equal parts and place them in the refrigerator to chill while preparing the fillings.
  5. For the cheese filling: Mix crumbled feta cheese, egg yolk, and finely chopped fresh parsley, then season with freshly ground pepper.
  6. For the meat filling: Mix chopped uncooked beef, finely chopped green onion, parsley, and egg yolk. Season with salt, pepper, and cumin.
  7. For the tahini filling: Combine tahini, fresh lemon juice, finely chopped parsley, and the juice of one pressed garlic clove. Season with salt and pepper.
  8. Preheat the oven to 375&# 194;°F (190°C).
  9. Take one part of the chilled dough and roll it out as thin as you would for a pie crust.
  10. Cut out 12 two-inch circles from the dough and place them on an ungreased cookie sheet.
