Shahi Gobi
Description
This classic Indian dish, Shahi Gobi, features tender cauliflower florets fried until golden and then simmered in a luxurious, spiced gravy. The sauce is built on a base of sautéed onions, garlic, and tomatoes, enriched with yogurt and warm spices like garam masala, cumin, and coriander. The result is a perfect balance of crispy texture and soft, flavorful sauce. It is an excellent vegetarian main course that pairs beautifully with naan bread, roti, or basmati rice.Ingredients
Directions
-
Blend the onions and garlic into a smooth paste using a food processor or blender.
-
In a bowl, mix the gram flour, salt, and chili powder with enough water to create a thin, batter-like consistency.
-
Cut the cauliflower into bite-sized florets.
-
Dip the cauliflower florets into the gram flour batter, ensuring they are well-coated.
-
Heat oil in a deep pan or pot and deep fry the battered cauliflower until light golden brown and crispy.
-
Remove the fried cauliflower from the oil and drain on paper towels. Set aside.
-
In a separate skillet, heat the ghee or oil over medium heat.
-
Add the onion and garlic paste to the skillet and sauté until the raw smell disappears and the mixture turns golden brown.
-
Stir in the turmeric, cumin, coriander powder, and garam masala. Cook for 1 minute until fragrant.
-
Add the diced tomatoes and yogurt to the skillet. Stir well and cook until the oil begins to separate from the masala.
-
Mash the tomato mixture slightly with the back of a wooden spoon to create a smoother gravy.
-
Pour in the water and bring the gravy to a boil.
-
Reduce the heat to low and add the fried cauliflower florets to the gravy.
-
Simmer for 5-7 minutes, allowing the cauliflower to absorb the flavors and the sauce to thicken slightly.
-
Garnish with fresh chopped coriander leaves.
-
Serve hot with naan, roti, or steamed rice.
