Description

This classic Indian dish, Shahi Gobi, features tender cauliflower florets fried until golden and then simmered in a luxurious, spiced gravy. The sauce is built on a base of sautéed onions, garlic, and tomatoes, enriched with yogurt and warm spices like garam masala, cumin, and coriander. The result is a perfect balance of crispy texture and soft, flavorful sauce. It is an excellent vegetarian main course that pairs beautifully with naan bread, roti, or basmati rice.

Ingredients

Directions

  1. Blend the onions and garlic into a smooth paste using a food processor or blender.
  2. In a bowl, mix the gram flour, salt, and chili powder with enough water to create a thin, batter-like consistency.
  3. Cut the cauliflower into bite-sized florets.
  4. Dip the cauliflower florets into the gram flour batter, ensuring they are well-coated.
  5. Heat oil in a deep pan or pot and deep fry the battered cauliflower until light golden brown and crispy.
  6. Remove the fried cauliflower from the oil and drain on paper towels. Set aside.
  7. In a separate skillet, heat the ghee or oil over medium heat.
  8. Add the onion and garlic paste to the skillet and sauté until the raw smell disappears and the mixture turns golden brown.
  9. Stir in the turmeric, cumin, coriander powder, and garam masala. Cook for 1 minute until fragrant.
  10. Add the diced tomatoes and yogurt to the skillet. Stir well and cook until the oil begins to separate from the masala.
  11. Mash the tomato mixture slightly with the back of a wooden spoon to create a smoother gravy.
  12. Pour in the water and bring the gravy to a boil.
  13. Reduce the heat to low and add the fried cauliflower florets to the gravy.
  14. Simmer for 5-7 minutes, allowing the cauliflower to absorb the flavors and the sauce to thicken slightly.
  15. Garnish with fresh chopped coriander leaves.
  16. Serve hot with naan, roti, or steamed rice.
