  1. Combine sherry, soy sauce, honey, and cornstarch in a small bowl; set aside.
  2. Bring a large saucepan of salted water to a boil.
  3. Add carrots and beans to the boiling water; boil for 1 minute.
  4. Remove carrots and beans with a slotted spoon and drain.
  5. Add squash, red pepper, snow peas, and broccoli to the pan; boil for 1 minute.
  6. Drain the vegetables.
  7. Pat tofu dry with paper towels.
  8. Heat oil in a skillet over medium heat.
  9. Add tofu and cook until golden, about 3 minutes.
  10. Transfer tofu to a serving dish with a slotted spoon and keep warm.
  11. Add ginger and garlic to the skillet; cook over high heat for about 30 seconds.
