  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Separate one large egg, lightly beating the yolk and setting the white aside.
  3. On a large flat surface, mix 1 1/2 cups of sifted unbleached flour with 1/4 to 1/3 cup of granulated sugar.
  4. Form a well in the center of the flour mixture.
  5. Add 1/2 cup of softened unsalted butter and the beaten egg yolk into the well.
