Description

This elegant yet approachable dish marries the briny freshness of shrimp with the bold, anise-forward notes of ouzo and the smooth warmth of cognac. The base is a rustic, slow-simmered tomato sauce enriched with garlic and olive oil, providing a robust foundation for the seafood. Crumbled feta cheese melts into the hot sauce, adding a salty, creamy contrast that balances the acidity of the tomatoes. Perfect for a special weeknight dinner or a light summer meal, it pairs beautifully with crusty bread to soak up the flavorful juices.

Directions

  1. Preheat oven to 425°F (220°C).
  2. Pour canned tomatoes into a mixing bowl and crush them by hand or with a fork into small pieces.
  3. Heat 4 tablespoons of olive oil in a heavy saucepan over medium heat.
  4. Add the finely chopped onion and sauté until softened and translucent, about 5 minutes.
  5. Add the minced garlic and cook for another minute until fragrant.
  6. Stir in the crushed tomatoes, sugar, salt, and pepper to taste.
  7. Simmer the sauce uncovered over medium heat for 10-15 minutes until slightly thickened.
  8. While the sauce simmers, heat butter and the remaining 2 tablespoons of olive oil in a large, heavy skillet over medium-high heat.
  9. Add the deveined shrimp and sauté until they turn pink and are just cooked through, about 2-3 minutes per side.
  10. Carefully pour the ouzo and cognac over the shrimp in the skillet.
  11. Ignite the alcohol with a long match or lighter to flambé the shrimp, allowing the flames to die down naturally.
  12. Arrange the cooked shrimp in a baking dish or individual ramekins.
  13. Spoon the tomato sauce evenly over the shrimp.
  14. Sprinkle the crumbled feta cheese and fresh chopped parsley over the top.
  15. Bake in the preheated oven for 10 minutes, or until the feta is melted and the dish is heated through.
  16. Serve immediately with crusty bread.
