  1. Place sun-dried tomatoes in a small bowl and cover with boiling water; let stand for 3 minutes until soft, then drain and chop finely.
  2. Add the rinsed and drained chickpeas to the skillet and cook for 2 to 3 minutes until the mixture is dry.
  3. Transfer the chickpea mixture and chopped sun-dried tomatoes to a food processor or blender.
  4. Add egg whites, minced garlic, dried thyme, and dried basil; pulse until the mixture is almost smooth but still retains some texture.
  5. Transfer the mixture to a bowl and stir in salt, ground black pepper, cayenne pepper, and breadcrumbs until a firm, cohesive mixture forms.
  6. Divide the mixture into 6 equal portions and shape each into a burger patty.
  7. Coat a large skillet with cooking spray and heat over medium heat.
