Ingredients

Directions

  1. Preheat oven to 375F (190C).
  2. In a mixing bowl, combine the ground sirloin, BBQ sauce, and Cavendar's spice until evenly distributed.
  3. Divide the meat mixture into 4 equal portions.
  4. Shape each portion into a ball, then flatten slightly in your palm.
  5. Place 1 tablespoon of grated cheddar and 1 teaspoon of minced green onion in the center of each flattened meatball.
  6. Carefully fold the meat over the filling, sealing it completely to form an elongated oval shape. Wet your hands slightly if needed to prevent sticking and ensure a tight seal.
  7. Place a wire rack over a roasting pan and arrange the meatballs on the rack to allow fat to drain during cooking.
  8. Bake for 45 to 60 minutes, until the internal temperature reaches 160F (71C) and the exterior is browned.
  9. While baking, wash and dry the lettuce leaves and cherry tomatoes.
  10. Place one lettuce leaf on each serving plate.
  11. Top each lettuce leaf with one cooked meatball.
  12. Garnish with cherry tomatoes, skewering them into the meat or placing alongside, and add fresh parsley or cilantro sprigs.

Note

To ensure the lean sirloin stays juicy, handle the meat gently when mixing and shaping to avoid compacting it too tightly.

If you cannot find very lean ground sirloin, you can grind a top sirloin steak at home after trimming all visible fat.

Wetting your hands with cold water helps keep the meat cool and makes it easier to seal the cheese filling without it sticking to your fingers.

For a lower-fat option, continue using the rack method to drain excess grease during baking.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven to maintain texture.

Feel free to adjust the spice level by using a milder BBQ sauce or adding a pinch of red pepper flakes to the meat mixture.
