Description

These Moroccan-style kefta skewers feature ground lamb seasoned with cumin, marjoram, and fresh herbs. The meat is formed onto skewers and broiled until browned, then brushed with a zesty glaze of olive oil, lemon, garlic, and paprika. This savory appetizer offers a tender, juicy bite with a fragrant, slightly smoky crust, making it perfect for parties or as a starter.

Ingredients

Directions

  1. Preheat the broiler. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a medium bowl, combine ground lamb, minced onion, chopped parsley, chopped mint, dried mint, cumin, marjoram, salt, and pepper. Mix well until evenly combined.
  3. Divide the lamb mixture into 4 equal portions. Form each portion into a sausage shape, pressing each firmly onto a skewer to secure it.
  4. Transfer the skewers to a rack placed in a broiling pan.
  5. In a small bowl or measuring cup, combine olive oil, lemon juice, minced garlic, and paprika. Mix well to create a glaze.
  6. Using a pastry brush, brush the oil mixture over the keftas, coating all sides evenly.
  7. Broil the skewers, turning once halfway through, until the keftas are browned on all sides and cooked through, about 5 to 6 minutes per side.
  8. Remove from the broiler and serve immediately.

Note

If fresh herbs are unavailable, you can use 1/2 teaspoon of dried parsley and increase the dried mint slightly, though fresh provides a brighter flavor.

Ensure your broiler is hot before adding the skewers for proper browning.

Serve with warm pita bread, hummus, or a side of yogurt sauce for a complete appetizer plate.
