Ingredients

Directions

  1. Bring a large pot of water to a boil.
  2. Place the whole green cabbage in the boiling water and blanch for 5 to 10 minutes until the outer leaves are loose and pliable.
  3. Remove the cabbage from the water and let it cool enough to handle.
  4. Carefully peel off 10 large, intact outer leaves, setting them aside for rolling.
  5. Chop the remaining cabbage core and inner leaves finely.
  6. Place the chopped cabbage in the bottom of a slow cooker to create a bed for the rolls.
  7. In a large bowl, combine the browned ground beef, uncooked rice, beaten egg, minced onion, minced carrot, salt, and pepper. Mix until well combined.
  8. In a separate small bowl, whisk together the cider vinegar, brown sugar, and canned tomato sauce until smooth.
  9. Lay a cabbage leaf flat on a work surface, shiny side down.
  10. Place 2 to 4 tablespoons of the beef mixture in the center of the leaf.
  11. Fold the sides of the leaf over the filling, then roll up tightly from the stem end to form a compact roll.
  12. Secure each roll with a toothpick if necessary to keep it closed during cooking.
  13. Place the rolls seam-side down in the slow cooker on top of the chopped cabbage bed.
  14. Pour the tomato sauce mixture evenly over the cabbage rolls.
  15. Cover the slow cooker and cook on Low for 8 to 10 hours until the cabbage is tender and the rice is cooked through.
  16. Remove toothpicks before serving.
