  1. Chop 1 cup of the onion into large hunks (about 1/2 inch) and finely chop the remaining 1 cup of onion, along with the green pepper and celery.
  2. Place a cast-iron Dutch oven over medium-high heat and add the large onion hunks. Singe them in the dry pan for 3-4 minutes, stirring constantly, until lightly charred.
  3. Add the finely chopped onion, green pepper, and celery to the pot. Cook for about 5 minutes, stirring frequently, until vegetables begin to soften.
  4. Stir in the white pepper, red pepper, black pepper, thyme, and dried parsley flakes. Mix well to incorporate the spices with the vegetables.
  5. Stir in 2 tablespoons of dry roux to coat the vegetables.
  6. Pour in the chicken broth and add the sliced pepperoni. If desired for extra smoke flavor, wrap any reserved chicken bones and skin in cheesecloth and add them to the pot now.
  7. Reduce heat to medium-low and simmer for at least 45 minutes, or until vegetables are tender and flavors have merged. Remove and discard bones and skin if used.
  8. About 5 minutes before serving, add the pulled smoked chicken pieces to the gumbo to heat through. Add more roux if a thicker consistency is desired.
