Chop 1 cup of the onion into large hunks (about 1/2 inch) and finely chop the remaining 1 cup of onion, along with the green pepper and celery.

Place a cast-iron Dutch oven over medium-high heat and add the large onion hunks. Singe them in the dry pan for 3-4 minutes, stirring constantly, until lightly charred.

Add the finely chopped onion, green pepper, and celery to the pot. Cook for about 5 minutes, stirring frequently, until vegetables begin to soften.
