Description

This refreshing Tzatziki sauce brings a cool, tangy crunch to any meal. Made with thick plain yogurt, finely grated cucumber, and zesty lemon juice, it offers a creamy texture that balances perfectly with the sharp bite of fresh garlic and olive oil. While traditionally served with pita bread or grilled meats, this versatile sauce is excellent as a spread for tortillas, adding moisture and flavor to tacos or wraps. It is incredibly easy to prepare, requiring no cooking, making it an ideal addition to quick weeknight dinners or packed lunches. The natural acidity of the yogurt and lemon keeps the palate bright, while the cucumber provides a satisfying, hydrating crunch. Serve immediately for the best texture, or chill briefly to allow the flavors to meld together before serving.

Ingredients

Directions

  1. Line a fine-mesh sieve with double thickness of cheesecloth and set it over a bowl.
  2. Spoon the plain yogurt into the lined sieve.
  3. Refrigerate the yogurt to drain for at least 3 hours, or up to 24 hours, until reduced to about 1 cup.
  4. Peel the English cucumber and grate it using a box grater.
  5. Place the grated cucumber into a clean sieve and sprinkle with half of the salt.
  6. Let the cucumber drain for 1 hour to remove excess moisture.
  7. In a small bowl, stir together the drained yogurt, drained cucumber, remaining salt, olive oil, lemon juice, minced garlic, and pepper.
  8. Mix thoroughly until well combined and serve.

Note

For a quicker version, you can skip draining the yogurt if you use thick Greek yogurt, but the texture will be slightly looser.

Draining the cucumber is crucial to prevent the sauce from becoming watery. Press the grated cucumber firmly with a spatula to extract as much liquid as possible.

This sauce tastes even better after chilling for 30 minutes to an hour in the refrigerator, allowing the garlic and lemon flavors to meld with the yogurt.

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Stir before serving if separation occurs.

For extra flavor, add fresh chopped dill or mint leaves to the mixture.
