Sorrel Borscht
Description
This vibrant Sorrel Borscht is a classic cold soup that bursts with fresh, herbal flavors and a pleasant tanginess. The star ingredient, sorrel, provides a distinctive lemony sharpness that is perfectly balanced by the sweetness of brown sugar and the richness of sour cream. Chopped potatoes add body and substance, while fresh dill and scallions contribute aromatic depth. Served chilled, this soup offers a crisp, refreshing texture that makes it an ideal starter for warm-weather gatherings or a light lunch.Directions
-
In a large soup pot, combine 4 cups of water, diced potatoes, dill sprigs, and diced scallions.
-
Bring the mixture to a medium boil over medium-high heat.
-
Cook for 5 minutes until potatoes begin to soften.
-
Add the chopped sorrel, lemon juice, salt, pepper, and brown sugar to the pot.
-
Reduce heat and simmer for 10 minutes.
-
Remove the pot from heat and discard the whole dill sprigs.
-
In a separate large bowl, beat the eggs with 1 cup of cold water until light and frothy.
-
Very slowly pour 2 cups of the hot sorrel stock into the egg mixture, stirring constantly to temper the eggs and prevent curdling.
-
Pour the tempered egg mixture back into the soup pot, stirring thoroughly to combine.
-
Cover and refrigerate the soup until very cold, for at least 3 hours.
-
Just before serving, whisk in the sour cream until smooth.
-
Garnish with fresh dill and diced cucumbers.
