Description

This quick sourdough starter combines the tang of fermentation with the reliability of commercial yeast for a robust base. Unlike traditional wild starters that take weeks, this method yields a bubbly, aromatic starter in just a few days. The addition of sugar feeds the yeast, creating a lively culture perfect for baking hearty, rustic breads. It offers a distinct sour note and excellent rise, making it ideal for beginners or busy bakers. Store it in the refrigerator and feed it weekly to keep it alive. Use it to make everything from crusty loaves to soft rolls.

Ingredients

Directions

  1. In a large bowl, sprinkle the dry yeast and sugar over the warm water.
  2. Stir the mixture until the yeast and sugar are completely dissolved.
  3. Let the mixture stand until it becomes foamy, approximately 5 minutes.
  4. Add the all-purpose flour to the yeast mixture and whisk until the batter is smooth.
  5. Cover the bowl tightly with plastic wrap.
  6. Let the starter stand in a warm, draft-free area for 2 to 3 days, stirring once daily until a sour aroma develops.
  7. Once the sour aroma is present, cover the starter tightly and refrigerate it for storage.
  8. When ready to use, bring the starter to room temperature and stir before incorporating it into your recipe.

Note

**Feeding and Maintenance:** If you do not use the starter at least once a week, you must replenish it to keep it alive. Pour off 1 cup of the starter and replenish it by adding 1 cup of warm water, 1 cup of all-purpose flour, and 1 teaspoon of sugar to the remaining starter. Whisk until smooth, cover with plastic wrap, and let stand in a warm, draft-free area overnight. Stir, then cover and refrigerate.

**Yield:** This recipe makes about 3 cups of starter.

**Storage:** Keep the starter in the refrigerator when not in use. Always return it to room temperature and stir before using in baking recipes.
