Description

This hearty South Texas Duck Gumbo combines the rich, gamey flavor of duck with the deep, nutty taste of a slow-cooked roux. The dish is loaded with aromatic vegetables, celery, carrots, bell peppers, and onions, creating a complex and savory broth. Okra adds a pleasant texture, while a blend of spices including cayenne, black pepper, and Tabasco provides a gentle heat that warms the soul. Chicken rice soup and tomatoes add body and acidity to balance the richness. This comforting stew is perfect for chilly evenings, family gatherings, or when you crave a robust, home-style meal. Serve it steaming hot over short-grain rice for the ultimate Southern experience.

Ingredients

Directions

  1. Cut duck fillets into 1-inch pieces.
  2. In a bag, combine flour, salt, pepper, and fillet seasoning (if using); add duck pieces and shake until lightly coated.
  3. Heat 1/2 cup unsaturated vegetable oil in a large skillet over medium heat.
  4. Brown the floured duck pieces in batches for about 5 minutes per side; do not overcook.
  5. Remove browned duck from pan and drain on paper towels; repeat with remaining duck.
  6. Discard the remaining flour mixture.
  7. In the same skillet, sauté celery, carrots, bell peppers, and onions until onions are lightly browned.
  8. Return the duck to the skillet and stir-fry with the vegetables for 10 minutes.
  9. While the duck cooks, bring 8 cups of water to a boil in a 1.5-gallon pot.
  10. Dissolve chicken bouillon cubes in the boiling water.
  11. Add chicken rice soup, diced tomatoes, Worcestershire sauce, bay leaves, Tabasco sauce, salt, black pepper, and cayenne pepper to the pot.
  12. Add the sautéed duck and vegetable mixture to the pot.
  13. Cover and simmer on low to medium heat for 45 minutes.
  14. Meanwhile, make the roux: heat 1/2 cup unsaturated vegetable oil in a separate skillet over medium heat.
  15. Sprinkle 1/4 cup flour into the hot oil and stir constantly.
  16. Continue adding flour a little at a time, stirring continuously, until the mixture is dry and light brown, about 10-12 minutes; do not burn.
  17. Remove the roux from heat and let it cool for 5 minutes.
  18. Add 2 cups of the hot duck soup from the main pot to the roux, stirring over heat until the mixture thickens.
  19. After the main soup has cooked for 45 minutes, stir the thickened roux mixture back into the pot.
  20. Cover and continue to cook for 30 minutes, stirring occasionally.
  21. Remove from heat and let stand for 20 minutes to allow flavors to meld.
  22. Serve hot over short-grain rice.

Note

**Storage:** Store leftovers in an airtight container in the refrigerator for up to 3 days. Gumbo often tastes better the next day as the flavors develop.

**Substitutions:** If duck is unavailable, you can substitute with chicken thighs or andouille sausage for a different flavor profile. Vegetable oil can be replaced with peanut oil for the roux.

**Safety:** Be careful when making the roux; it is very hot and can splatter. Keep stirring constantly to prevent burning, which will ruin the flavor.

**Variations:** You can add other proteins like shrimp or crawfish at the end of the cooking time for a seafood gumbo variation.

**Tip:** For a thicker gumbo, you can make a beurre manié (equal parts soft butter and flour kneaded together) and stir it in during the last 10 minutes of cooking.
