Ingredients

Directions

  1. Rinse the dried black beans and black-eyed peas, then cover them with plenty of cold water and let them soak overnight to soften.
  2. Preheat your oven to 275ðF (135ðC).
  3. Drain and rinse the soaked beans and peas.
  4. Place the beans, peas, and ham hock into a heavy 2-quart ovenproof pot or Dutch oven.
  5. Pour in the chicken stock or water, ensuring the liquid covers the ingredients by about an inch.
  6. Season with salt to taste if desired.
  7. Cover the pot tightly with a lid and place it on the stovetop over medium heat.
  8. Bring the liquid to a gentle boil, then immediately transfer the pot to the preheated oven.
  9. Bake for 1.5 to 2 hours, checking every 30 minutes.
  10. If the liquid is absorbed before the beans are tender, add 1/2 cup of hot stock or water each time you check.
  11. Remove from the oven when the beans are soft and the ham meat is falling off the bone.
  12. Discard the bone, shred the ham meat, and stir it back into the beans before serving.
