Spaghetti With Peas & Sun-Dried Tomatoes
Description
This vibrant pasta dish is a perfect balance of tangy, sweet, and savory flavors. The sun-dried tomatoes provide a deep, concentrated umami punch, while the fresh peas add a bright, sweet crunch that cuts through the richness. Tossed with spaghetti in a simple garlic and olive oil emulsion, this meal comes together in under twenty minutes, making it an ideal weeknight dinner. Its hearty enough to satisfy a hungry appetite yet light enough to feel fresh. Serve it with a side of crusty bread to soak up the flavorful sauce, or add a sprinkle of nutritional yeast for a creamy, cheesy finish without the dairy.Ingredients
Directions
-
Place the sun-dried tomatoes in a small bowl and cover with the boiling water. Let them soak for 5 minutes to soften, then drain, reserving the soaking liquid.
-
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. During the last 2 minutes of cooking, add the peas to the boiling water to cook them through.
-
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sauting for about 1 minute until fragrant but not browned.
-
Add the drained sun-dried tomatoes and a splash of the reserved soaking liquid to the skillet. Simmer for 2-3 minutes, stirring occasionally, until the sauce slightly thickens.
-
Drain the pasta and peas, reserving about 1/2 cup of the pasta water. Add the hot pasta and peas directly to the skillet with the tomato sauce.
-
Toss everything together over low heat for 1 minute, adding reserved pasta water a tablespoon at a time if the sauce looks too dry.
-
Remove from heat. Season with salt and black pepper to taste. Stir in the fresh parsley and serve immediately.
