Spiced Rice Pilaf
Description
This spiced rice pilaf is a fragrant and comforting side dish that brings international flavors to your table. The base of fluffy basmati rice is toasted with onion and garlic, then simmered with chicken broth, whole cloves, and a cinnamon stick for deep, warm aromatics. For a delightful contrast in texture and flavor, toasted almonds and sweet raisins are stirred in just before serving. The result is a dish that is both savory and subtly sweet, making it an excellent companion to curries, roasted meats, or grilled vegetables.Ingredients
Directions
-
Rinse the basmati rice under cold water until the water runs clear, then drain well.
-
In a large non-stick saucepan, heat 1 tablespoon of vegetable oil over medium heat.
-
Add the chopped onion and sauté until tender and translucent, about 3 to 4 minutes.
-
Stir in the minced garlic and whole cloves, cooking for another minute until fragrant.
-
Add the drained rice to the pan and stir gently to coat it with the oil and aromatics.
-
Pour in the chicken broth and add the salt and cinnamon stick.
-
Bring the mixture to a boil, then immediately reduce the heat to low.
-
Cover the saucepan tightly and simmer for 18 to 20 minutes, or until all liquid is absorbed and rice is tender.
-
Remove from heat and let stand, covered, for 5 minutes.
-
While the rice rests, heat 1 teaspoon of oil in a small skillet over medium heat.
-
Add the raisins and slivered almonds to the skillet, tossing frequently until the nuts are lightly toasted and raisins are plump, about 1 minute.
-
Fluff the rice with a fork and remove the cinnamon stick and whole cloves if desired.
-
Fold the toasted raisins and almonds into the rice until evenly distributed.
-
Serve warm as a side dish.
