Directions

  1. Preheat oven to 400°F (200°C). Grease a 10-inch pie plate or similar baking dish.
  2. In a 10-inch skillet over medium heat, cook the chorizo sausage, chopped onion, and garlic, stirring occasionally, until the sausage is browned and cooked through. Drain excess grease if desired.
  3. Stir the drained green chilies into the sausage mixture and set aside.
  4. Place 2 tortillas in the bottom of the prepared pie plate, overlapping them to cover the surface.
  5. Spread half of the sausage mixture evenly over the tortillas.
  6. Sprinkle half of the shredded cheese over the sausage layer.
  7. Place 2 more tortillas on top of the cheese, overlapping to cover.
  8. Spread the refried beans evenly over the tortillas.
  9. Place 2 more tortillas on top of the beans.
  10. Arrange the drained roasted red peppers evenly over the tortillas.
  11. Place the remaining 2 tortillas on top of the peppers.
  12. Spread the remaining sausage mixture over the top layer of tortillas.
  13. Sprinkle the remaining cheese evenly over the top.
  14. Cover the dish with foil and bake for 40 minutes.
  15. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly and the center is hot.
  16. Let the torte cool for 10 minutes before slicing and serving.
