  1. Peel the potatoes and cut them into quarters.
  2. Place the potato quarters in a large saucepan and cover with cold water.
  3. Bring the water to a boil, then reduce heat, cover, and simmer briskly for about 15 minutes or until the potatoes are tender.
  4. Drain the potatoes well and transfer them to a large bowl.
  5. Mash the potatoes coarsely with a potato masher or fork.
