Description

These Starlight Mint Surprise cookies are a delightful twist on classic chocolate chip treats. The dough combines the richness of butter and Crisco with both white and brown sugars for a deep, caramelized flavor profile. Each cookie encases a mint-flavored chocolate wafer, providing a cool, refreshing crunch that contrasts beautifully with the warm, chewy cookie. Topped with a walnut half, they offer a satisfying textural balance. Perfect for holiday gatherings or as a sophisticated afternoon snack, these homemade delights bring a touch of international flair to your dessert table. Simple ingredients come together to create a memorable treat that feels both nostalgic and unique.

Ingredients

Directions

  1. Grease baking sheets or line with parchment paper.
  2. Sift together flour, baking soda, and salt; set aside.
  3. Cream together butter and Crisco until light and fluffy.
  4. Gradually add granulated sugar and brown sugar, beating well.
  5. Blend in eggs, one at a time, mixing thoroughly.
  6. Stir in water and vanilla extract.
  7. Gradually beat in the sifted dry ingredients until just combined.
  8. Cover the dough with plastic wrap and refrigerate for at least 2 hours.
  9. Preheat oven to 375F (190C).
  10. Scoop about 1 tablespoon of chilled dough and flatten slightly in palm.
  11. Press a Starlight mint wafer into the center of the dough.

  13. Place dough balls on prepared baking sheets, spaced 2 inches apart.
  14. Press half a walnut onto the top of each cookie.
  15. Bake for 10-12 minutes, or until edges are lightly golden.
  16. Allow cookies to cool on baking sheet for 5 minutes before transferring to wire rack.

Note

For best results, ensure the dough is well-chilled before forming the cookies. This prevents them from spreading too much during baking and helps maintain the shape around the wafer.

You can substitute all butter for the combination of butter and Crisco if you prefer a richer flavor, though the texture may be slightly softer.

Store leftover cookies in an airtight container at room temperature for up to 5 days. They can also be frozen for longer storage.

If you cannot find Starlight mints, you can use other mint-flavored chocolate wafers or even peppermint patties cut in half, adjusting the dough amount accordingly.

Walnut halves are traditional, but pecans or omitting the nut topping entirely are also good options if you have allergies or preferences.
