Directions

  1. Place the filet mignon steaks and drained oysters in a shallow dish.
  2. Add 1 cup of the olive oil, dry vermouth, minced garlic, and Creole seasoning to the dish.
  3. Cover and refrigerate for 20 minutes, turning the steaks occasionally to ensure even marination.
  4. Meanwhile, in a mixing bowl, combine sour cream, prepared horseradish, Creole mustard, chili sauce, green onions, and minced parsley to make the sauce.
  5. Remove steaks from the marinade, reserving the liquid and oysters. Pat steaks dry.
  6. Heat the remaining 1/2 cup olive oil in a heavy skillet over high heat.
