Steaks With Crushed Peppercorns
Description
This elegant yet approachable dish features tender shell steaks generously coated in crushed black peppercorns, delivering a robust, spicy crust with every bite. The steaks are quickly seared to lock in juices, then set aside while a luxurious sauce is crafted in the same pan. Aromatics like finely chopped shallots are softened in butter, deglazed with dry white wine, and finished with heavy cream and a swirl of cold butter for a velvety texture. The result is a harmonious blend of heat, richness, and savory depth. Perfect for a romantic dinner at home or a special weekend meal, this recipe brings the sophistication of a bistro to your kitchen without requiring complex techniques or rare ingredients.Ingredients
Directions
-
Place the black peppercorns in a small bowl and crush them coarsely using a mallet or the bottom of a heavy saucepan. Do not grind them into a fine powder; you want distinct chunks for texture.
-
Pat the shell steaks dry with paper towels. Season both sides generously with salt.
-
Sprinkle the crushed peppercorns evenly over both sides of the steaks. Press firmly with your hands to ensure the peppercorns adhere to the meat.
-
Heat the corn oil in a heavy skillet (such as cast iron or stainless steel) over medium-high heat until it is hot and just beginning to smoke.
-
Carefully add the steaks to the skillet. Sear for approximately 3 minutes on the first side without moving them, allowing a crust to form.
-
Turn the steaks over and cook for another 2 minutes, or until desired doneness is reached. For medium-rare, aim for an internal temperature of 130F (54C).
-
Remove the steaks from the skillet and transfer them to a warm platter. Tent loosely with foil to keep warm while you prepare the sauce.
-
Pour off and discard any excess fat from the skillet, leaving the browned bits (fond) at the bottom.
-
Reduce heat to medium. Add 2 teaspoons of butter to the skillet. Once melted, add the finely chopped shallots and cook, stirring frequently, until they are soft and translucent, about 2-3 minutes.
-
Pour in the dry white wine, scraping up the browned bits from the bottom of the pan with a wooden spoon. Simmer and stir until the wine is almost completely reduced, about 1-2 minutes.
-
Stir in the heavy cream and bring to a gentle simmer. Cook for about 1 minute to slightly thicken the sauce.
-
Remove the skillet from the heat. Swirl in the remaining tablespoon of butter until fully melted and incorporated for a glossy finish.
-
Pour the peppercorn cream sauce over the steaks and serve immediately.
